Lemon & Elderflower Drizzle Cake
With the Royal Wedding just days away this cake uses the same flavours as Prince Harry and Meghan’s Wedding Cake. I’m really looking forward to seeing pictures of their non-traditional choice of Wedding Cake
It is easy to make using the all-in-one method and only takes a few minutes to prepare before baking in the pre-heated oven.

- 225 G SR Flour
- 225 G Butter
- 225 G Sugar
- 4 Eggs
- 2 Lemons
- 100 ML Elderflower Cordial
- Lemon Juice
- 100 G Sugar
Flowers for decoration
Preheat the oven to 180 degrees or 170 fan.
Line a large loaf tin.
Measure flour, butter, sugar and eggs into a bowl.
Zest both lemons and add to the bowl. (I always wash the lemon before zesting).
Mix together into a smooth batter and fill the loaf tin with the batter.
Bake for approximately 55 minutes until a skewer comes out clean from the centre of the cake.
Allow to cool for a few minutes then prick holes all over the cake
Mix together the cordial and juice to taste to your preference. The Elderflower is quite subtle so you don’t want to overwhelm with too much lemon!
Add to the sugar to make a syrup and pour all over the cake.
Allow to cool completely in the tin and add flowers for decoration. You can use real flowers but do make sure they are edible and safe to eat.
