Chocolate Loaf with Luscious Cream Cheese Icing
All the snow this week brought by the 'Beast from the East' has got me thinking about a family ski-ing holiday in the Alps a few years ago. One of the foodie highlights was a gorgeous chocolate cake topped with cream cheese icing. It was the first time I have tried it on a chocolate cake and I was converted! It also made me wish I could speak French so I could ask for the recipe!
This simple Chocolate Loaf with a luscious Cream Cheese Icing is my take on that cake. It is prepared and ready to bake in just a few minutes but will take around an hour to bake and then you need to allow it to cool before adding that gorgeous icing. There is plenty of icing in this recipe and if you have any left over, store it in a box in the fridge to accompany dessert or pudding.
Ingredients
Chocolate Cake Ingredients
- 150 g Self-Raising Flour (Sifted)
- 75 g Cocoa Powder
- 225 g Soft Butter
- 4 Large Eggs
- 225 g Caster Sugar
- 1 tsp Baking Powder
Cream Cheese Icing
- 90 g Cream Cheese I use Full-Fat Philadelphia as I find the consistency best for making the icing
- 225 g Icing Sugar (Sifted)
- 60 g Soft Butter

Preheat the oven to 170 degrees

Line a large Loaf tin with a paper liner

Mix all the ingredients together thoroughly in a large bowl. I use a Stand-Mixer with the paddle attachment but the chocolate cake will also work well mixed by hand

Pour the batter into the tin and smooth

Bake in the oven for approximately 50 minutes to an hour. Keep an eye on it and test the cake is baked using a skewer or cocktail stick. They will be come out clean when pushed into the centre of the cake and the cake will spring back when lightly pressed
Cream Cheese Icing

Mix all the ingredients together thoroughly in a large bowl. Again I use my mixer but you can beat the icing by hand although it may take at least 5 minutes

The icing will lighten in both colour and texture and become really smooth and creamy in consistency

Once the cake is entirely cooled, remove from the tin and spread the icing on top

Enjoy your freshly baked Chocolate cake with that luscious cream cheese icing!
